    Prep: Preheat oven to 350 F. Blend rolled oats in a dry blender to make flour. Line a cookie sheet with parchment paper.

    Step 1: In a bowl, use a fork to smash the peeled, ripe banana.

    Step 2: Add all ingredients, and mix batter with a spoon until combined. Fold in chocolate chips.

    Step 3: Scoop onto cooking sheet, line about 2 inches apart.

    Step 4: Use a fork to lightly flatten each cookie. Bake for 10 minutes or until edges are brown.

    Storage

    Store refrigerated. Store at room temperature in a container for 2 days. Refrigerate after that. Microwave or put in the oven to warm.
    Store frozen. Store frozen for up to three months.

    Recipe Tips

    • Be sure to use a very ripe banana for natural sweetness and easy mashing
    • Make sure your oats (if blending to make flour) are certified gluten free if needed. Or use GF certified oat flour.
    • Mini chocolate chips distribute better than large ones in these soft cookies.
    • Add 1 teaspoon of vanilla and a pinch of salt for more flavor.

    Yes! Either rolled oats or quick oats work. Both types blend will into a soft oat flour.

    • ¼ cup peanut butter (creamy or runny)
    • ½ cup rolled oats (blended into flour)
