Ingredients

- Cocoa. Unsweetened cocoa or cacao powder.
- Chickpeas. Canned, unsalted, full of protein and fiber. Also inexpensive.
- Yogurt. I used high fat coconut yogurt but you can use any yogurt, including greek yogurt if you don't need the cookies to be dairy free and vegan.
- Maple syrup. Or use any liquid sweetener including honey if you don't need the cookies to be vegan.
- Optional: vanilla, cinnamon, and sprinkles
Benefits of Chickpeas: Not only are canned chickpeas inexpensive, they are easily stocked up and useful in so many recipes. They are naturally low in saturated fat, and in ½ cup they provide 20 grams of protein, 5 grams of fiber and are high in folate, iron, and vitamin C.

Prep: Open a can of unsalted chickpeas and drain and rinse, add to a blender with the yogurt. Line a cookie sheet with parchment paper.

Step 1: Blend chickpeas and yogurt into a pulp.

Step 2: Add to a bowl and add cocoa and maple syrup.

Step 3: Scoop onto a parchment-lined cookie sheet and flatten with a spoon.

Store refrigerated. Store refrigerated for 3 days. They will be soft so layer them in a storage container between sheets of parchment paper.
Store frozen. Store frozen for up to three months. Allow to thaw for 10 minutes before eating.
Recipe Tips
- Don't freeze these cookies overnight or they will become too hard. They taste best after being frozen 15-30 minutes.
- You can also use white beans or cannellini beans if you don't have chickpeas which are also called garbanzo beans.
- Fold in mini chocolate chips if you want more chocolate flavor.
- If you want to disguise the bean flavor further, add 1 teaspoon vanilla and 1 teaspoon cinnamon.
