These easy oat, banana and chocolate chip cookies are just 3 ingredients and taste like banana bread. Blending rolled oats into flour makes the cookies unusually soft and chewy. They are naturally dairy free, gluten free, and ready in 15 minutes.
1teaspooncinnamon, nutmeg, cloves *or store-bought pumpkin pie spice mix

Prep
Preheat oven to 350 F. Blend your rolled oats in a dry blender for 30 seconds to make flour.
Make cookies
In a bowl, use a fork to smash the peeled, ripe banana. Add all ingredients, and mix batter with a spoon until combined.
1 banana, ¼ cup peanut butter (creamy or runny), ½ cup rolled oats (blended into flour), ½ teaspoon baking powder, 1 teaspoon vanilla, 1 teaspoon cinnamon, nutmeg, cloves *
Fold in chocolate chips.

Scoop onto cooking sheet, line about 2 inches apart, and use a fork to lightly flatten each cookie.
Bake for 12 minutes or until edges are brown.
Notes
To add banana bread spice flavor, add ½ teaspoon cinnamon, ⅛ teaspoon nutmeg and a pinch of cloves.
