Samoa Caramel Ice Cream (no churn, dairy free)

samoa caramel ice cream
has all the flavor of a Samoa cookie - caramel, chocolate, and coconut, in a creamy, high-protein ice cream you can make in minutes with just a blender. No dairy, no churn, no fuss.

Samoas ice cream

Salted caramel sauce

Instructions
Make homemade caramel sauce
Mix all ingredients in a bowl with a spoon.
¼ cup almond butter or cashew butter,
½ cup maple syrup,
¼ teaspoon salt
Microwave bowl for 15 minutes to make it drippy. Set aside.
Make samoa ice cream
Combine all ingredients in a blender. Blend on high speed until the mixture is smooth and creamy, with no lumps remaining.
2 ½ cups yogurt,
½ cup maple syrup,
⅔ cup almond butter or cashew butter,
1 teaspoon vanilla,
pinch salt
Add the mixture to a parchment-lined loaf pan.
Drizzle in caramel sauce, spiraling or submerging areas with a fork.
Freeze the ice cream for 30 minutes before chocolate drizzle.
Prepare chocolate drizzle
Melt the chocolate for 1 minute in the microwave. Set aside to cool for 10 minutes.
¾ cup chocolate chips, melted
Drizzle on top of ice cream in a spiral.
Sprinkle shredded coconut on top.
Freeze ice cream for 2 hours.

Notes
Use almond butter or cashew butter to avoid an overly peanuty flavor.
You can use an ice cream maker, and after 20 minutes it will resemble soft serve.
Freeze about 3 hours in order to achieve a scooping texture straight from the blender.
Freezing the ice cream overnight will make it brick hard so freeze like that in single serve portions so you can microwave for 30 seconds to thaw.
