Step 1: Add wet ingredients and sugar to a mixing bowl and mix about 1 minute with a hand mixer.

Step 2: Add dry ingredient to the wet mixture by adding them through a fine mesh strainer.

Step 3: Mix up the batter until just combined, about 2-3 minutes. Don't mix more or the texture will be rubbery.

Step 4: Scoop the batter using a medium scoop and filling paper-lined cupcake pans about 2/3 of the way.

Step 5: Bake the cupcakes about 20 minutes or until a tester comes out clean. Allow to cool in pan for 5 minutes, pull them out and cool on a rack until cool before frosting.
