Step 1: Grate zucchini and strain and press to squeeze out water. I normally press through a strainer, then squish in paper towels. Take 2 cups of grated zucchini down to 1 cup.

Step 2: Add ingredients to a mixing bowl, and use a hand mixer to quickly combine. Don't overmix or texture will release gluten and become rubbery.

Step 3: Fold in the grated and press zucchini. Fold it with a spatula until combined. Once you bake, it will disappear.

Step 4: See? You can't see the zucchini and it disappears even more when you bake it. Pour the batter into a parchment-lined loaf pan and bake.
