Here I added chia seeds, hemp seeds and frozen blueberries in with rolled oats and lots of spices to create a fragrant, nutritious granola high in protein, fiber and the ability to balance your blood sugar, power you through your day and make your kitchen smell wonderful.
Blueberry Hemp Skillet Granola (Shortcut Method to Make Homemade Granola)
Ever made homemade granola? It's easy to make on a cookie sheet, right? Just create a big pile of stuff on your cookie sheet and bake.
Well what if I told you had an ever faster method? A method that fills your kitchen with an amazing smell and puts hot delicious fresh granola in your breakfast bowl in minutes!
It's a terrific idea to make it yourself because there is the option to add in all your favorite ingredients.
And keep the granola quite unprocessed. I went this route after a frustrating day, hunting supermarket shelves, looking for brands that had the particular mix of ingredients one of my daughter's wanted, which happened to be chia, hemp and blueberries. Obviously homemade is best to cater to a specific dietary need, such as gluten-free or nut-free.
So, convincing myself to make it at home was an easy leap, but I have an issue with oven recipes, haha. Somehow recipes seemed less overwhelming on a stove top.
Why Not Use A Skillet to Warm Granola?
So, after shopping, I was sauteing mushrooms, and it came to me. Why can't I stir up homemade granola in a skillet? It will have a crunch texture and the kitchen will smell amazing. And no, this granola doesn't have mushrooms in it.😂
But it does have an enormous amount of protein and I really feel best when I've had a strong protein breakfast.
And it is a fast job, beginning to end. It is actually faster than making spaghetti, haha. I don't know about you, but I find the wait (12 minutes) to get spaghetti boiled to al dente and interminable wait. #patiencemuch
Stirring up granola ingredients in a bowl, then heating them in a skillet took me less than seven! Take that spaghetti! I hope you like my short-cut to homemade granola!

How to Make Homemade Granola in a Skillet (blueberry hemp)
Ingredients
- 1 ¼ cup gluten-free rolled oats
- ¾ cup nuts/seeds I chose hazelnuts, almonds, pecans, sunflower seeds
- ½ cup blueberries I used fresh but dried is also fine
- 3 tablespoon hemp hearts
- Spices 1 tablespoon cinnamon, ½ teaspoon ginger, 1 teaspoon vanilla powder, pinch of salt
- 3+ tablespoon coconut oil
- 3+ tablespoon maple syrup
Blueberry Compote (for the parfaits)
- ½ cup of blueberries
- 2 teaspoon lemon juice

Instructions
To make the granola:
- To make the skillet granola, in a bowl, combine with a spoon the oats, nuts, hemp hearts, spices and maple syrup.
- Heat a skillet and melt the coconut oil and coat the pan.
Pour in the granola mix in and stir to heat, about 3-5 minutes, until you feel it is fairly warm and clumpy. Don't have the heat too high because coconut oil can burn; and don't stop stirring. Be ready to stir in more maple syrup if it doesn't seem moist enough; or more coconut oil instead if you don't want it too sweet.Gently fold in the blueberries, don't squash them. If you choose a different berry, stir in that choice instead. - Pour the finished granola on a cookie sheet lined with parchment to dry.
- With your clean fingers, push the granola into small clumps while warm if you like clumpy granola, or spread out with a fork if you like it crumbly and flaky.You can eat it now, warm and sticky.To store, set aside the cookie sheet to allow granola to cool and dry at room temperature.
- When the granola is cooled, store in an air-tight container in refrigerator - ours lasted only a day or so before we ate all up. Ours never dried sufficiently to be stored safely in a pantry - so, since it is so easy to make fresh, we typically try to make only enough to eat that day.
To build the parfaits
- To make the parfaits, stir together the blueberries and lemon juice and squash with a fork until you have a jammy texture.
- Layer 3 parfait glasses with your new granola, plant yogurt and the blueberry compote.
- Enjoy!
