These Cookie Dough Frozen Yogurt Bars are easy to make with just 5 ingredients, healthier than commercial frozen yogurt bars and perfect for adults as well as kids. With cookie dough chunks in every bite, these dairy free and gluten free frozen yogurt pops are the perfect hot weather treat.
These cookie dough frozen yogurt bars, or cookie dough frozen yogurt pops, are so easy to make, low in sugar, high in protein, and chockful of homemade healthy mini cookie dough chunks.
These frozen yogurt bars, sometimes referred to as yogurt pops, yogurt clusters or yogurt patties, are much healthier copycats of store-bought yogurt bars such as Yasso, Dairy Queen's Buster Bars or Dilly Bars, and Clio Greek yogurt bars. These homemade frozen yogurt pops are easy to make with your favorite yogurt, sweetener, peanut butter, almond flour and chocolate. And customizing them is fun - here I added cookie dough, but the options are endless.

Ingredients
Almond flour. You can sub other flours such as oat flour or coconut flour, but you'll have to adjust for their varied amounts of absorbency.
Yogurt. Use any yogurt, including zero fat, cashew yogurt, coconut yogurt, or even Greek yogurt if dairy is okay. If you use a sweetened flavor yogurt, you may not need maple syrup so taste-test.
Peanut Butter. This keeps the frozen yogurt from freezing too hard and adds protein. You can use any nut butter as long as it's runny and not dry.
Maple syrup. Or any liquid sweetener.
Vanilla extract, baking soda + salt. For flavoring. I add the baking soda to the cookie dough bits to give them authentic cookie dough flavor but it is optional.
Chocolate chips. To add to the dough, and to melt for a chocolate shell on top.

Step by Step Instructions

Prep: Start by making a small batch of cookie dough. Also line a cookie sheet with parchment paper.
#1 Make Homemade Cookie Dough Chips
Step 1: Mix almond flour, peanut butter, maple syrup, mini chocolate chips.
Step 2: Press into pan to about ½ inch deep and freeze, covered with foil for about 2 hours or overnight - it needs to be very hard to chop into mini bits.
Step 3: Once frozen, chop into tiny squares and store in a bag in the freezer ready to be added to these frozen yogurt bars or to add to ice cream, or even to add to drinks such as my Starbuck's caramel ribbon crunch frappuccino.
#2 Make Frozen Yogurt Bars
Step 1: In a small bowl, mix together the flour, yogurt, peanut butter, and maple syrup.
Step 2: Mix until fully combined, and fold in frozen cookie dough bites. Make sure the bits are small, as small as mini chips.
Step 3: Scoop the batter with a large or medium-sized scoop. Level the circles with a spoon, press in popsicles sticks, sprinkle on more homemade cookie dough chips, and freeze for 2 hours.
Step 4: Melt the chocolate chips and coconut oil for 1 minute in the microwave. Allow the melted chocolate to cool a few minutes, then dip the frozen bars in, shake and lay on a fresh piece of parchment.
Step 5: Place the bars in the freezer for an additional 2 minutes or until coating is firm and enjoy!
Storage
Store leftovers in an air tight container in the freezer for up to 3 months.
Recipe Tips
📌Use any kind of yogurt. It can be plain, non fat or full fat. To keep the bars vegan and dairy free, use cashew or coconut yogurt. If you use a flavored yogurt or sweetened one, adjust the maple syrup you add so the bars are not too sweet.
📌You can use any peanut butter but it should be runny with only peanuts and salt in the ingredients for health. If it appears dry, you can try microwaving the jar for 10 second increments and stir to make it creamy.
