This homemade blueberry ice cream is full of citrus and is an incredibly nutrition dessert made of both blueberries and avocado. It's an easy recipe to make with four main ingredients. Why You'll Love This Recipe
That's because blueberries are full of fiber, potassium, folate, vitamin C, vitamin B6, and phytonutrients that support the heart. And the antioxidant levels are through the roof!
Antioxidants are scavengers that scoop up damaging free radicals that cause disease and other issues.
You also do not need bananas, or coconut cream. And certainly no heavy cream and sugar as you would find in a traditional dairy ice cream. The avocados make the texture creamy.
Ingredients
- Blueberries. Use them frozen.
- Avocado. Avocados make this recipe creamy, and healthy. Avocados have a ton of healthy fats, and up to 20 vitamins and minerals.
- Dairy-free yogurt. Yogurt adds moisture and increases the creamy texture.
- Maple syrup. This is your sweetener. You can also use date syrup.
- Lemon juice. Only a little to brighten the flavor.
- Baobab powder. I love this powder because it boosts the vitamin C levels sky high.
Steps to Make
1. Blend up ice cream ingredients. And pour into a lined 4x9 inch loaf pan. Freeze at least 2 hours.
2. Then break up the frozen mixture with a fork and re-blend it creamy before scooping into cones.
3. We keep the remainder in the freezer, until ready to be re-blended and scooped. So healthy and delicious, even perfect for breakfast!

How Does This Taste?
It tastes like a cross between a creamy ice cream and a sherbet - a touch of iciness in the texture. But it scoops wonderfully, and if you do have an ice cream maker, it would probably be creamier.
What Goes Well With Blueberry Ice Cream?
We serve ours in cones but it is also delicious on a slice of pound cake because it is not overly sweet.

Hi Teresa, this recipe is already dairy-free. I recommend using a plant yogurt like coconut yogurt or cashew yogurt. Almond or cashew milk would be too thin and result in an icy texture. Hope that helps!
