Ingredients
Ginger root. Use fresh ginger root for this, and scrape off the skin with a spoon. Choose large chunks of ginger, with smoother sides. The fewer the knobs, the more ginger paste you will get out of it.
See the recipe card at the bottom for full information on ingredients and quantities.
Equipment Needed
Spoon. Needed to scrap skin off the root.
Blender or food processor. To blend up the ginger paste.
Step by Step Instructions
For more detail, visit the complete and printable recipe at the bottom of this post, but here are general steps.
Step 1: Wash the ginger to get the worst of the visible dirt off. Then using the edge of a spoon, scrap off all the skin. Snap off the smallest knobs if needed to get into crevices.
Step 2: Chop the peeled ginger into small chunks and add to a blender or a food processor along with 1 tablespoon of water per cup of ginger chunks. A blender will give you a smoother result.
Step 3: Process the ginger until you have a paste. It will take anywhere from 1 minute to 3 minutes to break down depending on the power of your blender.
Step 4: Transfer the ginger puree into jars, or ice cube trays or scoop on a parchment-lined pan. If added to ice cu be trays or scooped, freeze one hour until solid, then store in freezer bags.
How to Store
Refrigerate. Ginger paste can be stored refrigerated in a sealed jar for up to 3 days. If you add a pinch of salt, the ginger paste can last fresh an additional day.
Freeze. Frozen in ice cube trays and then bagged, ginger puree can last a year.
Recipe Tips
1 pound of fresh ginger makes ½ to ⅔ cup of ginger paste.
If your blender is very weak, add up to 2 tablespoon of water per 1 cup of ginger root to encourage blender blades.
Don't try to blend less than ½ cup of ginger or it won't be enough to break down.
Don't strain. Some internet recipes call for straining off the ginger juice using cheesecloth or a strainer - I disagree. Your ginger paste needs some moisture so store it straight out of the blender.
How to Use Ginger Paste
You can toss the frozen portions of ginger paste into most recipes without thawing. Use this convenient food prep seasoning in:
- Stir fried recipes
- Roasted vegetables (cauliflower steaks, roasted mushrooms)
- Curries, Stews, Soups
- Smoothies
- Cocktails
- Ginger tea
- Desserts such as cookies, brownies, cupcakes, candy
- Sauces and dips including green olive tapenade
- Pasta & main meals including fried spaghetti and chickpea meatballs
