Homemade Snickers Ice Cream Bars have a creamy high protein ice cream layer, topped with a creamy caramel layer, and then crunchy peanuts. These bars, made easily in one bowl and a loaf pan, are then coated with chocolate.
It's a high protein ice cream treat with strong nutrition, and will help you feel great, high in protein and brain-boosting magnesium. Best of all, Snickers ice cream bar calories are under 200, depending on how thick you cut your bars!
Ingredients
Ice Cream Layer
Peanut butter. I also use cashew butter for a more neutral flavor.
Coconut milk. I used full fat canned coconut milk, room temperature with the can shaken so the solids are not separated from the liquids.
Maple syrup. Or your favorite liquid sweeteners.
Vanilla extract & salt. For flavor, and chopped peanuts to layer.
Peanut Butter Caramel
Peanut butter. I used runny type, with peanuts the only ingredient.
Maple syrup. Or your favorite liquid sweeteners.
Coconut milk. Canned full fat canned coconut milk, room temperature.
Chocolate Shell
Chocolate chips.
Coconut oil.

Step by Step Instructions

Prep: Make sure the can of coconut milk is at room temperature and shaken.
Step 1: Added ice cream ingredients to a blender, and blend.
Step 2: Pour the ice cream mixture into a parchment-lined loaf pan. Freeze for maybe 30 minutes to an hour or until solid.
Step 3: Mix the peanut butter caramel in a bowl, and spread on frozen ice cream.
Step 4: Top the caramel layer with peanuts and freeze the pan for 2 hours or until solid enough to cut into bars.
Step 5: Once hardened, lift the bars out of the loaf pan, slice one-inch-wide bars.
Step 6: Melt the chocolate chips and dip these bars to coat. Put the bars in the freezer for 5-10 minutes to harden the chocolate shell. Enjoy!
Recipe Tips
I use canned coconut milk for creamier ice cream, but other milks can also be used for this recipe.
