Ingredients for Dairy Free Klondike Bars
Ice Cream Layer
Peanut butter. Or use cashew butter or almond butter for a more neutral flavor. Or use sunflower seed butter for a nut free dairy free klondike bar.
Coconut milk. I used full fat canned coconut milk, room temperature with the can shaken so the solids are not separated from the liquids. Or use cashew milk or almond milk, although the ice cream may have an icer texture.
Maple syrup. Or your favorite liquid sweetener.
Vanilla extract & salt.
Chocolate Shell
Chocolate chips.
Coconut oil. Or olive oil.
Puffed rice. Or use puffed quinoa to add a crunchy shell to make a krunch klondike bar.

Step by Step Instructions

Prep: Make sure the can of coconut milk is at room temperature and shaken.
Step 1: Added ice cream ingredients to a blender.
Step 2: Blend the mixture about 1 minute. It will be liquidy.
Step 3: Pour the mixture into a mold or ice cube tray. You can also pour it into a parchment-paper-lined loaf pan (see recipe tips).
Step 4: Freeze the mold, tray or pan about 1-2 hours - as long as it takes so they are solid.
Step 5: Melt the chocolate and oil in the microwave for 1 minute. Dip the frozen bricks in the mixture with a fork.
Step 5a: To create a Krunch Klondike, add puffed rice to the melted chocolate before coating.
Step 6: Line the coated bricks on parchment paper to set. Store frozen.
Make Krunch Klondie Bars
To add a crunch coating to your homemade klondike bars, mix into ½ cup of melted chocolate about ½ cup of a crunch ingredient such as puffed rice, cereal or even or popped quinoa . Dip the frozen ice cream bars in that.

I use canned coconut milk for creamier ice cream, but other milks can also be used for this recipe.

Make ice cream layer
