It is a refreshing vegetable juice with the tang from fresh ginger, brightness from an orange, and sweetness by grapes. And like my ginger juice, my celery juice and my cucumber lemon juice, it's easy to make this healthy drink with just a blender.

Ingredients
- Beets. Use fresh raw beets. Wash, peel, chop and blanche for best flavor and to be sure they are clean enough to eat raw.
- Green grapes. Try to buy organic grapes. Green grapes are sweetest, but other colors are also fine.
- Orange. Any type of orange, peeled.
- Ginger. Fresh ginger root is best. You don’t even need to peel it. Just wash it well and chop it into small pieces.

Prepare Beets for Juice
The key to a delicious beet juice is how you prepare your beets. You will be using raw beets, so washing off the dirt and getting them to a good size to process is your goal. Follow these steps to clean and chop your beets.
- (Image 1) Chop off the greens, and rinse your beets with water, rubbing off obvious dirt. You can also clean them with a veggie cleaner if you have one, or even a white vinegar solution (add 1 tablespoon of vinegar to a cup of water).
- (Image 1) Use a paring knife or a potato peeler to scrap off top skin.
- (Image 2) Chop the beets into small pieces.
Now you must be sure your raw beets have no bacteria on them since you'll be using them raw, and to soften them. To do that, blanche them.
- (Image 3) To blanche your chopped beets, drop them in a pot of boiling water for 2 minutes.
- (Image 4) Drain the beet pieces and drop them into a bowl of cold water. Now your beets are ready for juicing.
Step by Step Instructions
Step 1: Prepare your beets as described above and set them aside and prepare your other ingredients.
Step 2: Wash your orange, peel it, remove seeds if wanted, and cut or segment. (Image 1)
Step 3: Clean grapes: Rinse organic grapes. If you couldn't buy organic, rinse the grapes in a solution of white vinegar (add 1 tablespoon of vinegar to a cup of water). This solution clears away pesticides and bacteria on fruits. Put the grapes in a bowl and pour the solution over them until they are submerged - make more solution if needed. Strain off the vinegar solution and rinse the grapes with fresh water. (Image 2)
Step 4: Prepare ginger: Scrub your ginger root. There is no need to scrap off the skin, just chop the root into small pieces. (Image 3)
Step 5: Two ways to make beet juice.
- Use a Juicer: Feed the beets and fruit into the chute and run the juicer according to manufacturer's instructions. The juice you gather is ready to consume. Discard the pulp, or freeze it to add to smoothies.

Storage
Refrigerated. Fresh beet juice should be consumed right away for optimum nutritional benefits. However, it is still drinkable for up to 2 days refrigerated in a sealed container.
Frozen. To freeze homemade beetroot juice long term, pour it into ice cube trays and freeze. Once frozen, store the cubes in freezer safe containers for up to 6 months. To thaw, put a few cubes in a glass refrigerated overnight, and drink in the morning.

1. This recipe makes 1 cup of juice, or 8 ounces, but it's thick so could easily be doubled by adding a cup of water if you prefer a thinner juice.
2. Don't skip blanching. Blanching is important to clear the raw beets of any residual dirt or bacteria, and to soften them, especially important when blending to avoid a grainy texture to your juice.
3. If using a blender, it needs to be a high-speed blender. Or you could break down the mixture in a food processor without the water, and then use a blender with the water addition.
