    These Biscoff brownie balls are no bake, no dates, wholesome and made with only 4 ingredients. Instead of dates, I used maple syrup, making this healthy chocolate treat high in nutrition. These cookie balls are coated with melted chocolate chips and ready in 15 minutes.

    These no bake biscoff brownie balls are mixed easily in a single bowl, rolled into single balls, coated with melted chocolate and ready after only 10 minutes in the refrigerator.

    These rich 4-ingredient brownie balls are gluten free, dairy free, vegan and even refined sugar free. This easy balls recipe uses maple syrup instead of dates which are found in the traditional brownie ball recipes. I love dates but thought I'd offer a less expensive alternative to make brownie balls without dates that are naturally sweet, high in fiber and rich in amazing nutrients.

    Ingredients for Biscoff Brownie Balls

    • Maple syrup. For sweetening, structure and fudgy texture.
    • Cinnamon.
    • Optional. You might need milk to soften texture, chocolate chips to melt for topping and salt and vanilla for flavor.

    Prep: Either buy or blend rolled oats to make oat flour.

    Step 1: Crush Biscoff cookies or graham crackers with a spoon. Add ingredients to a bowl.

    Step 2: Mix the Dough: Stir into a smooth, scoopable dough. If it’s too dry, add a teaspoon of milk at a time; if too wet, add more flour.

    Step 3: Divide the batter into balls. Use a 2-tablespoon scoop.

    Step 4: Chill the balls if they seem sticky or loose, maybe 10 minutes. Melt the chocolate chips in the microwave for 1 minute. Cool for 2 minutes.

    Step 5: Dip the balls into the cooled, melted chocolate. Dust with Biscoff + cinnamon. Slice and enjoy!

    Variations

    • Biscoff balls for Christmas. Sprinkle the balls with crushed cookies and Christmas or other holiday sprinkles.
    • Pumpkin Biscoff Balls. Add 2 tablespoon of canned unsweetened pumpkin puree - not pumpkin pie puree. Taste-test and add a few tablespoon of maple syrup for sweetening.
    • Instead of dark chocolate, melt white chocolate for the coating.

    • Texture Adjustment: Add a little milk if the mixture feels crumbly, or more flour if too sticky.

    • ⅓ cup Biscoff cookies, crushed or graham crackers
    • ¼ cup oat flour (dry blend rolled oats)
    • ¼ cup maple syrup
    • 1 tablespoon cinnamon

    • ¼ cup chocolate chips
    • 2 tablespoon Biscoff cookies, crushed

    Instructions
     

    Prep

    • Crush Biscoff cookies. Either buy or blend rolled oats to make oat flour.

    Make brownie balls

    • Add all ingredients to a bowl.
      ⅓ cup Biscoff cookies, crushed, ¼ cup oat flour, ¼ cup maple syrup, 1 tablespoon cinnamon
    • Stir into a smooth, scoopable dough. If it’s too dry, add a teaspoon of milk at a time; if too wet, add more flour.
    • Divide the batter into balls. Freeze until hard enough to dip, maybe 5 minutes.

    Make chocolate topping

    • Add the chocolate chips to a heat-safe measuring cup, microwave for 1 minute. Stir until thick and creamy.
      ¼ cup chocolate chips, 2 tablespoon Biscoff cookies, crushed, 1 teaspoon cinnamon
    • Dip the balls into the cooled, melted chocolate. Either lower the balls and roll with two forks, or use two fingers to plunge the balls into the chocolate leaving the flat base free of chocolate.
    • Top with crushed Biscoff cookies and cinnamon mixture.
    • Cut and serve

    Notes

    Keep these brownie balls refrigerated for 4 days or freeze for 3 months.
