    These Chocolate Cherry Brownies are made in one bowl, no bake and with only 3 ingredients. This brownies and cherry treat is dairy free, gluten free and refined sugar free.

    This chocolate cherry brownies recipe is the perfect example of how to add fruit to brownies. Yes you can add fruit to brownies. In fact, fruit can replace eggs and oil in brownies, easily.

    Here I used cherries, but bananas and other fruits and even vegetables and beans work as well. Consider my chocolate date brownies , my cauliflower brownies and my chickpea brownies. Your cherry brownies are one bowl, no bake, and make a healthy energizing treat.

    Why You'll Love Cherry Brownies

    Ingredients

    • Cocoa powder. Use a quality unsweetened cocoa or cacao powder to be sure your brownie tastes rich and chocolatey. I love Navitas cacao powder and Valhrona or Ghirardelli cocoa powder.
    • Cherries. Frozen is best. Fresh might be okay
    • Cashew butter. Or use any nut or seed butter.
    • Maple syrup. This might be optional if your cherries are sweet enough.

    Chef's Tip: This batter will probably be thick so use a stronger blender or food processor. I use a Blendtec with a Twister jar . The twister jar has two arms on the cover that you twist to agitate the blender contents, producing a creamier texture.

    Step 1: Add cherries, nut butter and cocoa powder to a blender.

    Step 2: Blend into a creamy batter. Taste and add maple syrup if needed.

    Step 3: Spoon into a parchment-lined loaf pan. Level the top. Optional, press halves of frozen cherries into the batter.

    Step 4: Dot the top with more halves of frozen cherries, and sprinkle with chocolate chips.

    Step 5: Freeze until ready to slice - at least 1 hour or longer.

    Recipe Tips

    • Choose a quality cocoa powder or cacao powder - this will greatly impact the positive flavor of these brownies.
    • This batter will probably be thick so use a stronger blender or food processor. I use a Blendtec with a Twister jar . The twister jar has two arms that allow you to agitate the blender contents as it blends, producing a creamier texture.
    • If you use fresh cherries, be sure to rinse them in vinegar and then water, then pit them. Slice in half to assist blender. You might have to adjust cocoa powder and maple syrup if you batter seems too wet or dry.
    • Taste-test blended mixture for sweetness and depending on the sweetness of your cherries, you might have to add more maple syrup.

    Variations

    • Mix-ins. You can mix into the batter things such as more fresh or frozen cherries, mini chocolate chips, other crushed nuts, even marshmallows.

    Storage

    • Room temperature. This treat cannot last at room temperature.
    • Frozen. Wrap them individually and store frozen for up to 3 months or longer. Allow 5 minutes to thaw.

    Can I add cherries to brownie mix?

    Yes, you can substitute eggs with cherries in a boxed brownie mix and most brownie recipes. Just use ¼ cup frozen thawed cherries instead of each egg. So if the box calls for 3 eggs, add ¾ cup of thawed frozen cherries. Cherries act like a binder just like eggs do.

    Can I bake this cherry brownie batter?

    No, it doesn't have any ingredients to help it bake.

    Do chocolate and cherry go together?

    Yes, chocolate and cherry make a wonderful flavor pairing because the pH levels of each merge to deepen the chocolate flavor.

    Ingredients
      

    • 2 cup cherries, frozen and thawed
    • ½ cup cashew butter or any nut butter
    • ⅔ cup cocoa powder I use this cacao powder

    Optional

    • 3 tablespoon maple syrup
    • ½ cup chocolate chips

    Instructions
     

    • Line loaf pan with parchment paper. Measure out frozen cherries and let them thaw about 10 minutes.
    • Blend cherries, nut butter and cocoa powder. Add 1-2 tablespoon of water if needed to blend.
      2 cup cherries, frozen and thawed, ½ cup cashew butter, ⅔ cup cocoa powder, 3 tablespoon maple syrup
    • Taste your mixture. The sweetness will depend on the sweetness of your cherries so add maple syrup if needed.
    • Spoon into a parchment-lined loaf pan. Level the top. Optional, press halves of frozen cherries into the batter.
      ½ cup chocolate chips
    • Dot the top with more halves of frozen cherries, and sprinkle with chocolate chips.
    • Chill for 60 minutes or longer to slice into 8 slices.

    Notes

    Store frozen in individual packages, and thaw for 5 minutes before eating.
    Taste-test blended mixture for sweetness and depending on the sweetness of your cherries, you might have to add 1-3 tablespoon of maple syrup. If it gets too liquidy, add another tablespoon of cocoa.
    If you use fresh cherries, be sure to rinse them in vinegar and then water, then pit them. Slice in half to assist blender.
