Prep: Preheat oven to 325 F and line a baking pan or cookie sheet with parchment paper. Stir chia seeds in 2 tablespoon of water and allow to plump about 10 minutes.
How to Melt and Measure Coconut oil: Put the jar of solid coconut oil in a pot of boiling water (microwaving will burn). Stir until enough has melted so you can measure off ⅓ cup.
