    These no bake chocolate cheesecake bars are easy to make in 30 minutes, with a creamy protein-rich filling, a healthy grain free crust, and loaded with chocolate. Gluten free, dairy free, refined sugar free - these chocolate cream bars are easy to make in one bowl.

    These no bake chocolate cheesecake bars are high in protein and fiber, filled with a creamy middle layer, and topped with chocolate chips. These chocolate cream bars are easy to make in just 30 minutes. Mix the crust in a bowl, blend the cream filling, pour into a loaf pan, and chill for half an hour.

    These bars are gluten free, dairy free, refined sugar free and high in protein. And they are easy to make ahead and store in the freezer until you are ready to enjoy! Similarly easy no bake desserts include my no bake brownie cups, no bake pumpkin pie bars and chocolate hazelnut bars.

    Ingredients

    Crust

    • almond flour. A high protein flour, grain free.
    • cocoa powder. Unsweetened cocoa powder or cacao powder.
    • maple syrup. Or any liquid sweetener.
    • milk, salt, vanilla.

    Cheesecake Filling

    • cream cheese. I used a dairy free brand in bar form, but any cream cheese bar brand works.
    • yogurt. I used dairy free cashew yogurt, but any plain full-fat brand works.
    • cocoa powder. Unsweetened cocoa powder or cacao powder.
    • maple syrup. Or any liquid sweetener.
    • vanilla extract.

    Topping options

    • chocolate frosting for rosettes, or pour on melted chocolate, or sprinkle chocolate chips.

    Steps to Make Cheesecake Bars

    Make the Crust

    Step 1: Make crust: add ingredients into a bowl and mix into a batter.

    Press the chocolate cheesecake bar crust into a loaf pan.

    Step 2: Press the mixture into a loaf pan lined with parchment paper, with the two long sides hanging over.

    Make the Cheesecake Filling

    Step 3: Add cheesecake ingredients to a bowl and mix with a spoon or hand-mixer for a minute or until creamy. You will want to focus on breaking down the cream cheese bar.

    Step 4: Once the filling is creamy, dollop it on the crust, and spread it level. Then chill for 30 minutes in the freezer or until you can slice.

    Step 5: Once chilled, slice into 8 bars, make your frosting and pipe on rosettes and serve or refrigerate until ready to serve. If you don't want to make frosting or use store-bought, you can add a single chocolate layer of ganache, see directions below.

    To make a chocolate ganache layer: Melt 1 cup of chocolate chips in the microwave for one minute, then microwave ⅓ cup of milk for 35 seconds, stir together and pour on top of chilled cheesecake bars, and chill for another 30 minutes before slicing.

    Recipe Tips

    • I used the bar version of cream cheese. If you want to use the tub version instead, you'll need to add a bit more flour because the tub has more moisture.
    • To make dairy free cheesecake bars - Use a plant-based or vegan cream cheese and yogurt, such as Kite Hill's almond milk cream cheese, and SoDelicious' coconut milk yogurt.
    • To make gluten free cheesecake bars - Use certified gluten free ingredients. That means the manufacturers have not processed their products in the same factory as gluten products.

    Storage

    Once topped, store the sliced bars refrigerated uncovered or in a roomy sealed container for 24 hours. Or freeze for 2 months, individually wrapped.

    Is it better to bake or not bake a cheesecake?

    A no bake cheesecake is easier and healthier because they are made with wholesome ingredients such as almond flour and yogurt, the texture is lighter, and the recipe requires few steps.

    Is this no bake cheesecake dairy free and vegan?

    Yes, just be sure to use dairy free and vegan yogurt and cream cheese.

    Crust

    • ¾ cup almond flour

    Instructions
     

    Crust

    • Pour filling onto crust and freeze until solid, about 30 minutes. Slice into 8 bars, top with chocolate frosting rosettes and enjoy.

    Notes

    Storage: Store refrigerated uncovered or in a roomy sealed container for 24 hours. Or freeze for 2 months, individually wrapped.
    To top with chocolate rosettes: Use your favorite homemade frosting or store-bought frosting to make rosettes using a frosting bag and frosting tip. 
    To top with chocolate ganache: Melt 1 cup of chocolate chips in the microwave for one minute, then microwave ⅓ cup of milk for 35 seconds, stir together and pour on top of chilled cheesecake bars, and chill for another 30 minutes before slicing.
