Easy chocolate coconut caramel bars are no-bake with three creamy, melt-in-your-mouth layers and all made with wholesome unprocessed ingredients.
These chocolate coconut caramel bars are a no-bake chocolate desserts, so delicious and so easy to create, completed in less than 30 minutes. Like my other chocolate treats, they are naturally dairy-free, vegan and gluten-free.
And in case you need convincing, the bottom layer has the consistency of crumbly chocolate cake, and the middle layer is delicious coconut butter, and the next layer up is sweet date caramel made with date paste, and the top is a melted chocolate bar.

This recipe is the single most requested recipe in my house. And even relatives from afar clamor for me to make and mail them. I think mostly because there are three different desserts in one, and bar is so full of healthy whole foods that don't cause a sugar crash, are high in fiber and are so energizing and filling, perfect to support an active day or even appetite control.
Ingredients
Flour: Almond and coconut help make this base full of fiber and protein.
Buckwheat groats: Provide structure and many essential nutrients not found in other foods. Walnuts can be used instead.
Shredded coconut: This single ingredient makes a delicious white frosting-like middle layer.
Dates: Make a homemade date paste by blending dates with water for this healthy caramel layer.
Chocolate: Chips or bar, melted, make another single-ingredient layer, the snappy top.
Steps to Make
1. To prep, soak the dates and buckwheat groats the night before.
2. Make each layer, starting from the bottom up. The two middle layers are so simple, just coconut butter and date paste. Both of which are inexpensive to make at home ahead of time and have other uses so make more of each and refrigerate it.
3. Assemble them and freeze the bars.
Recipe Tips
1. Be sure to soak the dates and buckwheat groats overnight, and rinse them the next day.
2. To cut clean slices, dip a sharp knife in hot water, wipe dry, and make a cut. Then repeat.
3. If buckwheat groats are hard to find (try the bulk food area of a Whole Foods), or use walnuts instead but don't soak them.

Storage
These bars last a long time both refrigerated and frozen. To store either way, slice into bars, wrap each individually in plastic wrap and store in a sealed container. They last a week refrigerated and three months frozen.
Nutrition
These three ingredients add a lot of nutrition. Dates contribute iron and fiber, cashews and coconut are high in protein and health fats, and buckwheat groats are a pseudo cereal, high in both protein and fiber as well as manganese, magnesium, phosphorus, niacin, zinc, folate, and vitamin B6.
The other ingredients are all wholesome too, with their own contributions, coconuts, dark chocolate and more.
Make Homemade Vegan Caramel

Chocolate Coconut Caramel Bars
Ingredients
Soft Cookie Base
- ¾ cup almond flour
- ¾ cup coconut flour
- ¾ cup buckwheat grouts or walnuts
- 1 teaspoon vanilla paste
- ½ cup coconut oil
- 6 tablespoon water
- 3 tablespoon maple syrup
- 2 tablespoon cocoa powder leave this off for a blond base
Creamy coconut butter
- 1 cup homemade coconut butter Use my recipe here.
Caramel Layer
- 1 cup homemade date paste Use my recipe here.
Chocolate Top
- 1 3.17oz dark chocolate bar
- 2 teaspoon coconut oil
Useful Equipment
- 1 8 inch by 8 inch pan
Instructions
Prep
- You can soak overnight the dates and buckwheat together, but I have been just boiling them together for 5 minutes and it works great. Just rinse very very well once boiled.If you are using walnuts INSTEAD of buckwheat groats DO NOT BOIL or SOAK the walnuts.Line the pan with parchment paper.
Make the Base
- Put all base ingredients into a food processor.Process until thoroughly mixed, and press the resulting sticky dough into a pan lined with parchment. I smooth the surface by putting another sheet of parchment on top and pressing with a spatula. Pop this pan into the freezer while you make the soft layer.
Make the Other Layers
- Make the coconut butter following my coconut butter recipe. Basically blend up 4 cups of shredded coconut into a creamy spread and press that onto the base later.
- Make the caramel layer by following my date paste recipe. Basically blend up 10-12 dates with ½ cup of water and spread that on the coconut butter layer.
- Put back in freezer while you melt the chocolate in the microwave at 60 seconds. Once melted, pour onto the top layer and freeze the slices with a cover of foil or parchment for at least two hours.
- Then heat a sharp knife by dipping it into hot water, wiping it dry, and cutting. Repeat.
- Store slices in freezer long-term or refrigerate for a week if you don't mind them soft.
