    Making homemade pistachio milk is an easy dairy-free milk to make by blending shelled raw pistachios and water. Make this homemade nut milk in a blender in minutes.

    Making pistachio milk couldn't be easier. Just blend up toasted pistachios, store the pistachio butter you just made, add water and blend for pistachio milk.

    It's especially easy to if you use pre-shelled pistachios such as this brand. Pistachio milk is one of the healthier nut milks, both high in protein and doesn't spike blood sugar.

    It's also easy to convert pistachio milk into a sweetened pistachio syrup perfect to make pistachio lattes or dribble on ice cream or pancakes. No need to buy commercially-processed pistachio syrup with additives and weird preservatives.

    How This Milk Tastes

    Homemade pistachio milk tastes creamy and buttery, provided you don't add too much water. It is also low in carbs, and doesn't spike blood sugar. And it has a nutty flavor depending on the pistachios you used.

    • Pistachio butter. Make it yourself in a blender. It's easy to make homemade pistachio butter in minutes. Here is a more detailed recipe but I explain the basics in the recipe card below.

    🥣Steps to Make Pistachio Milk

    Step 1: Roast pre-shelled pistachios to dry them out. To do this, spread them on a quarter-sized baking pan, spread thin on parchment paper. bake at 350 F for 2 minutes. Cool for a few minutes.

    Step 2: Add the pistachios to a blender. Process for one minute until you have a roughly-texture pistachio butter.

    Step 3: Store your pistachio butter in a jar in the refrigerator for other uses and recipes. Leave about 1 tablespoon of pistachio butter in the blender jar.

    Step 4: Add 1 ½ cups of water and blend again about 1 minute. The frothy white-green milk is your pistachio milk!

    Pro tip: Don't use a food processor - it is not strong enough to blend pistachios down to butter. I recommend a small blender like a Ninja or this Twister Jar with a Blendtec blender.

    🍃Ways to Use Pistachio Milk

    • Add pistachio milk to a glass and enjoy chilled!
    • Add sugar or salt or even vanilla to enhance your pistachio milk's flavor
    • Enjoy in Pistachio Lattes or Pistachio Milkshakes.
    • Make pistachio cold foam, and use it in pistachio matcha lattes, cocktails or mocktails.

    • I use this shelled brand. Pistachios from Canada, Turkey and Iran are general greener. Pistachios from California are more brown. Here are bright green slivered pistachios from Canada that are awesome but expensive.
    • You can buy pre-shelled or shell yourself depending on which you value more, saving money or time.

    🥣How to Make Pistachio Syrup

    Making a homemade pistachio syrup is useful because commercial brands are full of weird ingredients and not a lot of true pistachio flavor. To convert your homemade pistachio milk into a sweetened homemade pistachio syrup, follow these steps:

    • Step 1: Make pistachio milk. To ½ cup of pistachio milk, add 1 tablespoon sweetener (cane sugar, brown sugar, maple syrup or honey), and a pinch of salt. Blend again. Taste it and if you want it sweeter, add more sweetener.
    • Step 2: Strain and bottle the syrup. It lasts about 2 days in the refrigerator, and can be frozen for 1 month in ice cube trays.

    No, just like pistachios, pistachio milk helps stabilize blood sugar by maintaining a stable glucose level.

    Does pistachio milk have to be refrigerated?

    Homemade pistachio milk does have to be refrigerated and can last about 3 days chilled. That's because it does not have any additives or preservatives - just fresh raw pistachios and water.
