These dragon fruit protein bites are made with 3 ingredients and with a zing of citrus help restore muscles, make hair shiny and boost your mood.
Dragon fruit protein bites look a little like those pastel candy wafers called Necco wafers, but the nutritional profile is far superior. These bites are packed with white beans, dragon fruit and lemon so they taste a bit like a robust kiwi and yet give you a boost of protein energy.
Why You'll Love These Bites
Full of protein. These bites are full of protein from white beans.
Immunity boosters. Thanks to dragon fruit, also called pitaya. The fruit is actually from the cactus family and has such numerous nutritional benefits. They strengthen your immune system with flavonoids and extremely high levels of vitamin C. They fight disease with a huge concentration of antioxidants, as well as B vitamins.
Full of fiber. Both the beans and the fruit are high in calcium, iron, protein, and fiber.
Ingredients
White Beans. Navy, cannelini or northern beans work. Use canned, unsalted and organic is best.
Dragon Fruit. To get this gorgeous pink color, use pink dragon fruit. In most of northern America, you can only find pink dragon fruit as frozen in the frozen fruit sections. Fresh white dragon fruit also works. Visit my how to eat dragon fruit post to learn how to prepare it.
Lemon Juice.
See the recipe card at the bottom for full information on ingredients and quantities.
