Make healthy strawberry popsicles easy and delicious with refreshing hints of mint. My lemon popsicles with hints of thyme. These healthy homemade popsicles are all fruit, boost detox and weight-loss, and use a quick trick to infuse them with fresh herbs.
Strawberry popsicles are terrifically refreshing on their own, but remove the additives and sugar, and replace with fruit and suddenly your refreshing popsicle is a healthy breakfast!
Since I love infusing water (read my Infused Water Guide here), I decided to try infusing my popsicles with fresh herbs.
Specifically here, I infused my strawberry popsicles with mint, and created a new homemade popsicle flavor as well, Lemon Thyme, by infusing lemon popsicles with thyme. I also tend to toss in baobab powder, a delicious plant root, that tastes like lemon and provides tons of vitamin C.

Why Add Herbs To Popsicles?
Adding the flavor and scent of herbs to popsicles does many good things.
1. The addition of both mint, ginger and even baobab boosts the detox and immunity power of these popsicles.
2. It boosts the popsicle's ability to help you lose weight by boosting your metabolism, but also by tricking your taste-buds into thinking you've already eaten.
3. It enhances the flavor of the fruit. Fruits vary in their level of sweetness depending on age and growing factors. Adding herbs boosts whatever sweet flavor is there so you don't have to add more sugar or think your popsicles are not flavorful.
4. It's easy and makes ordinary homemade popsicles fancy and special.
How to Add Infused Herbs to Popsicles
My method involves no waiting around for 2-3 hours steeping, I promise!
Basically you crush the herbs and boil or bubble for a few minutes on the stove. Strain off the herbs and use that infused water as a portion of the liquid in your homemade popsicle recipe.
These bright herbs turn the pop into a frosty treat equally appropriate to a family picnic and as a dinner-party palate cleanser (perhaps serve it this last way sans stick, and chopped into a tiny bowl).

My homemade strawberry popsicles contain:
Water infused with mint, lemon juice, baobab powder and a ton of strawberries. Basically this popsicle is a giant freshly-enhanced strawberry.
I also made lemon popsicles infused with thyme by blending up water infused with both thyme and fresh ginger, lemon juice and a touch of maple syrup.
How to Make
So easy! Just crush the mint leaves, boil them for 1-2 minutes in water, strain off the leaves and use the water to make the popsicles along with a ton of strawberries. Same method is used to make the lemon thyme popsicles.

Strawberry Popsicles
Ingredients
Lemon Thyme Popsicles
- 1 cup water
- ¼ cup fresh thyme sprigs (crushed) (Crush by pressing down on the sprigs with a spoon)
- 3 tablespoon fresh ginger root (peeled, crushed) (Peel off skin, chop into chunks)
- 1 cup lemon juice (Organic is not necessary; EWG.org says no pesticide concerns with lemons)
- 3 tablespoon maple syrup
Strawberry Mint Popsicles
- 1 cup water
- ¼ cup fresh mint (crushed) (Crush by pressing down on the sprigs with a spoon)
- 2 tablespoon lemon juice
- 3 cups strawberries
- 1 tablespoon baobab powder

Instructions
Make Strawberry Popsicles
- In a sauce pan, bubble ½ cup water, and mint for 1-2 minutes - don't let the water boil away. Strain the mixture using a small strainer so you remove the mint leaf solids.
- Let the mixture cool a bit, and add to a blender with the other half cup water, strawberries, lemon juice and baobab powder.
- Blend until smooth, pour into popsicle molds.
Make the Lemon Thyme Popsicles
- Peel the brown skin off the fresh ginger root using the edge of an upside-down spoon. Chop into rough chunks.In a sauce pan, bubble ½ cup water, thyme sprigs, and ginger root for 1-2 minutes - don't let the water boil away. Strain the mixture using a small strainer so you remove the thyme and ginger root solids.
- Let the mixture cool a bit, and add to a blender with the other ½ cup water, lemon juice and maple syrup. Taste-test to be sure it is sweet enough for your liking; add more maple syrup if you want it sweeter.
- Blend until smooth, pour into popsicle molds.
Freezing the Popsicles
- Freeze for 30 minutes, then insert sticks.
- Freeze for at least 4 hours or overnight before eating.
Removing Popsicles From Mold
- Remove popsicles by submerging mold (not getting popsicles wet) in a tub of hot water, or running the bottom of the mold under hot tap water. Pull out a popsicle, put it in the freezer immediately. Enjoy!
