Aquafaba Mango Smoothie
Watering my lawn is hard work. Especially with a hand sprayer.
It’s kind of like hand-mixing vs. a counter mixer, although not quite as fun because there is no resulting cake, haha. Anyway, I was outside, spraying away – getting the dog a couple of times when he became too curious and I was gazing up at the cloud-strewn sky – when I realized something.
Aquafaba might be awesome in a smoothie.
It’s airy and pillowy just like the clouds I was staring at. Why should it be relegated to dessert recipes only? And the more I thought about it, the more I realized the addition of aquafaba to a smoothie would be perfect in a vegan, plant-based diet – bringing in a lightness and even a bit of protein.
So, I decided then and there that the lawn had had enough of my attention, and I made a dash for the kitchen. Throwing ingredients as I thought of them – and based on what I had in the fridge – I came up with this! One sip and I swooned.
Such an airy pillowy citrusy mango flavor. Admittedly it takes a bit of time to whip up the aquafaba – about 9 minutes. But the reward is a show-stopper of a smoothie for a special brunch event or just as a one-time treat.
Do you know what aquafaba is? It’s the liquid you get off a can of chickpeas (or the liquid you cook them in if you make it from scratch).
Aquafaba is said to be low in calories as well, and to contain a bit of protein, almost as much as what is found in egg whites. And combining it with smooth and creamy mango is really a dream smoothie!
Okay, so while you go try this recipe. I will go back out and finish watering my lawn.

Aquafaba Mango Smoothie
- 1 cups frozen or fresh mango
- 1 cup frozen fruit such as pears, peaches or banana
- 1/2 cup almond milk
- 1/4 cup aquafaba (the liquid from a can of chickpeas)
- 2 tsp lemon juice
- Freeze fruit overnight.In your blender, whip aquafaba into a foam. About 1 minute.
- Add all ingredients and blend until smoothie. Drink immediately.
