This mango smoothie is summer in a jar thanks to mango, pineapple, lemon juice and a fluffy top made with aquafaba.
Aquafaba is the liquid found in a can of chickpeas - it's notable because when frothed it creates the texture of meringue, like on a meringue pie. Aquafaba is low in calorie and doesn't contribute nutrition, it's just a fun texture. It's also delicious on a smoothie, especially if you add pineapple or lemon juice to flavor the form. Or you can just froth regular milk with hand frother.

Ingredients
- Mango - fresh or frozen. However at least one ingredient must be frozen, mango or pineapple or milk. One fresh medium-sized mango yields one cup chopped fruit.
- Pineapple - the perfect tropical and yet sweet partner for mango.
- Lemon juice - to brighten the flavor.
- Milk - freeze your favorite type in an ice cube tray night before. Never add water to a smoothie.
- Aquafaba or Frothed Milk - Drain the aquafaba from a can of unsalted chickpeas. An extra can be frozen in ice cube trays.

Steps to Make a Mango Smoothie

- Step 1: Prep ingredients. Freeze milk and fruit overnight. Drain and collect the aquafaba, add a teaspoon or two of pineapple juice or orange juice and lemon juice, and use a hand frother to froth the aquafaba at room temperature for about 1 minute. Or froth milk if using instead.
- Step 2: Make Smoothie. Add all ingredients except the frothed liquid into the blender and process until smooth. Pour the smoothie into a glass, spoon on the frothed top, and drink immediately.
Storage
Store smoothie covered in refrigerator for no longer than 24 hours, or freeze in an ice cube tray to blend again when convenient.
Variations
- Swap the pineapple for any other frozen fruit of a lighter color, such as frozen pears (not peeled), even a frozen banana, although paired with mango might produce a too-sweet smoothie.
- Swap the milk for a dairy-free but unsweetened yogurt, or chilled coconut water.
- Add protein and omegas in the form of a handful of chia seeds.

All things tropical! So add coconut or papaya instead of pineapple.
