Date Tip: Use Medjool dates which are larger and softer and best for this recipe. They are easy to find in packages in the produce section of most supermarkets.
Ingredients Needed

- Chocolate chips. Use a quality dairy-free brand like Enjoylife or chop up your favorite chocolate bar, and melt in the microwave for 45 seconds.
- Dates. Use Medjool dates. Soak them for 2 minutes in boiled water, pit and chop in half, and the chop those halves in half.
- Peanut butter. Use a runny healthy kind with only peanuts as ingredients, no added sugar.
- Cocoa. Unsweetened cocoa or cacao powder is perfect. Dutch processed is also fine. Do not use sweetened cocoa mix.
- Almond flour. You can use oat flour, but almond flour is best to support the rich chocolate flavor as almond flour has sweet rich undertones. Do not use coconut flour.
- Pantry ingredients include vanilla, baking soda, milk, lemon juice.

Steps to Make Date Brownies

Prep: Melt chocolate chips (hold bake a few to sprinkle on top) in the microwave for 45 seconds. Soak dates for 1-2 minutes in just boiled water. Pit and add the dates to a blender. Line a loaf pan with parchment paper; allow sides to overhand the long sides of the pan. Preheat the oven to 350 F.

Step 1: Add the milk to the dates in the blender.

Step 2: Blend until you have a puree, about 60 seconds with a high speed blender.

Step 3: Add the rest of the ingredients to the mixture.

Step 4: Blend until smooth, about 45 seconds.

Step 3: Pour the mixture into the parchment-lined loaf pan. Level off the batter and sprinkle with remaining chocolate chips.

Step 4: Bake at 350 F for 30 minutes. Remove when the top has cracks, and a toothpick comes out clean. Check at 25 minutes if your oven runs hot.

Step 5: Cool the brownies in the pan for 10 minutes. Then remove from pan and allow the brownies to cool before slicing for a clean cut.
Storage
Refrigerated. In a sealed container, these date brownies last 2 weeks.
Frozen. In a sealed container in the freezer, your healthy date brownies will last 6 months.
Recipe Tips
Switch to a nut-free date brownies by seed butter instead of nut butter, and oat flour instead of almond flour.
Date replacement. Dried figs or deglet dates also work if medjool dates are unavailable.

A blender is best especially with the first step, making date paste with milk. Continue with a blender, or switch to a bowl. Just add the paste and other ingredients to a bowl and mix or stir.

Prep

- Soak dates in a pot of just boiled water for 2 minutes, pit and add to a blender.
- Line a loaf pan with parchment paper; allow sides to overhand the long sides of the pan. Preheat the oven to 350 F.
Make date brownies
