These chocolate strawberry date bites are incredibly easy to make in ice cube trays. They can save easily in the freezer and are ready for a quick energy boost.
Fresh dates are full of unrefined sugar, easy to find in the grocery produce section, and are high in fiber, iron and nutrients. Fresh strawberries and melted chocolate are the only other ingredients needed. And my favorite ice cube tray - this one is rubbery and so easy to remove treats intact.

Tip: Use Medjool dates which are larger and softer and best for this recipe. They are easy to find in packages in the produce section of most supermarkets.

- Chocolate chips. Use a quality dairy-free brand like Enjoylife or chop up your favorite chocolate bar.
- Dates. Use Medjool dates. Soak them for 2 minutes in boiled water, pit and chop in half, and the chop those halves in half.
- Strawberries. Fresh strawberries, washing and sliced into 4s. Don't use frozen.

Prep: Melt chocolate chips in the microwave for one minute. Dollop a teaspoon into each ice cube tray square. Soak dates in boiled water for 2 minutes. Then cut them into 4 equal pieces. Wash the strawberries and cut each into 4 pieces.

Step 1: Add a half a date into each chocolate layered ice cube tray.

Step 2: On top of the dates, add 2 strawberry quarters

Step 3: Top the cubes with the rest of the melted chocolate.

Step 4: Freeze until the cubes can be removed - probably about 15 minutes if you use this ice cube tray.

Step 5: Chill the date bites for 30 minutes or as long as it takes to remove them from the ice cube trays.

Instructions

- Add a teaspoon of peanut butter to each cube, on top of each date half.
- Add a teaspoon of melted chocolate on top of the peanut butter.
