    High protein chocolate chia pudding bites are creamy with a snappy chocolate coating, and made with 4 ingredients easily in an ice cube tray. These chocolate protein fudge bites are dairy free, gluten free, refined sugar free.

    My high protein chocolate chia pudding bites made with just 4 ingredients in an ice cube tray. These are vegan, gluten-free, refined sugar free, dairy free, and will keep you energized.

    These healthy protein fudge bites are full of nutrition and made from wholesome ingredients that you probably already have in your kitchen. They take about an hour to freeze, and I used this ice cube tray, but you can use any one you own type or a mold or even paper-lined mini muffin pans.

    Why You'll Love Chocolate Chia Pudding Bites

    My no bake chocolate chia pudding bites:

    • a fudgy protein-rich bite encased in snappy chocolate.
    • dairy free, gluten free, refined sugar free, vegan
    • this no bake treat is made with just 4 ingredients

    Ingredients

    chocolate chia seed bites.
    • Cocoa. Unsweetened cocoa or cacao powder.
    • Chia seeds. Black or white.
    • Yogurt. I used high fat coconut yogurt but you can use any yogurt, including greek yogurt if you don't need the bites to be dairy free and vegan.
    • Maple syrup. Or use any liquid sweetener including honey if you don't need the bites to be vegan.
    • Chocolate chips. Melt these for the snappy chocolate coating.

    Steps to Make Chia Seed Bites

    Prep: Melt chocolate chips and coconut oil in the microwave for one minute. Dollop a teaspoon into each ice cube tray square.

    Step 1: Stir the chia seeds into the yogurt and set aside for 5 minutes to plump the chia seeds.

    Step 2: Stir all ingredients together in a bowl.

    Step 3: Spoon the chia seed mixture on to the layered chocolate in the ice cube tray.

    Step 4: Spoon on the top another layer of melted chocolate.

    Step 5: Chill about 15-30 minutes, remove and enjoy.

    Storage

    Refrigerated. In a sealed container, these chocolate protein fudge bites last 2 weeks.
    Frozen. In a sealed container in the freezer, your chia seed protein bites will last 6 months.

    Recipe Tips

    • Don't freeze these bites overnight or the chia pudding will become too hard. They taste best after being frozen 15-30 minutes.
    • You can also blend the chocolate chia pudding to create a smoother texture by blending it before spooning into the ice cube trays.
    • Add any crunchy mix-ins such as nuts or chocolate chips.
    • Sweeteners. I used maple syrup to keep it refined sugar free but honey works too if you don't need to make vegan bites.

    Can these protein fudge bites be baked?

    No, these are a no bake candy recipe that needs to be frozen in an ice cube tray.

    Are these chocolate chia pudding bites vegan and gluten free?

    Yes, the ingredients are only almond flour, yogurt, chia seeds, maple syrup and chocolate.

    Ingredients
      

    Chia Pudding Filling

    • 2 tablespoon chia seeds
    • ½ cup yogurt
    • 2 tablespoon cocoa
    • 2 tablespoon maple syrup
    • 1 teaspoon vanilla
    • pinch salt

    Chocolate top & bottom

    • 1 cup chocolate chips
    • 1 tablespoon coconut oil

    Instructions
     

    Prepare the chocolate top & bottom

    • Melt chocolate chips and coconut oil for 1 minute in microwave. Stir until smooth.
      1 tablespoon coconut oil, 1 cup chocolate chips
    • Spoon half into the ice cube tray wells. Set aside or refrigerate while you make the filling.

    Make chia pudding filling

    • Stir the chia seeds into the yogurt and set aside for 5 minutes to plump the chia seeds.
    • Stir all ingredients together in a bowl.
      ½ cup yogurt, 2 tablespoon cocoa, 2 tablespoon maple syrup, 1 teaspoon vanilla, pinch salt, 2 tablespoon chia seeds
    • Spoon the chia seed mixture on to the layered chocolate in the ice cube tray.
    • Spoon on the top layer of melted chocolate.
    • Freeze filled trays for 30 minutes or however long it takes for your freezer to freeze them enough so you can remove them from the ice cube trays.

    Storage. Refrigerated. In a sealed container, these vegan Snickers bites last 2 weeks.
    Frozen. In a sealed container in the freezer, your healthy Snickers bites will last 6 months.
