    These Pistachio Brownies are an easy high protein, no bake dessert made with only 4 ingredients, with the delicate flavor of chopped pistachios, and dairy free, gluten free and refined sugar free.

    This pistachio brownie recipe makes brownie slices that are soft, fudgy, and have a pistachio nutty outer crunch. I made these brownies into a brownie log, rolled in nuts, but they can also be made into traditional brownie squares.

    Either way this recipe makes nutty pistachio brownies in 5 minutes, and can be kept in the freezer ready to grab when you need a sweet treat with a dash of nutrition. Each slice - only about 2-tablespoons - has a whooping 5 grams of protein and 3 grams of fiber. Eat as many slices as you see fit!

    Ingredients

    • Maple syrup. Or your favorite liquid sweetener.
    • Pistachios. Crushed.
    • Peanut butter. Or use any nut or seed butter.

    Step 1: Crush pistachios and set aside. Add all other ingredients to a bowl.

    Step 2: Stir ingredients until a substantive batter forms. You need to be able to roll it so add a bit more cocoa powder if the batter is too wet (from peanut butter).

    Step 1: Use parchment paper to roll the batter into a log. Use your hands to make it uniform and smoothie, and flatten the ends.

    Step 2: Spread the crushed pistachios on a dish or flat area. Roll the log back and forth so the outer area is coated in crushed pistachios.

    Step 5: Slice the brownie log into ½-1-inch slices. Stack in a storage tray and refrigerate.

    To make traditional brownie squares: Press the batter into a parchment-lined loaf pan, flatten, sprinkle with crushed pistachios. Slice and enjoy!

    Recipe Tips

    • Use a food processor for a smoother texture to the batter.
    • You can make traditional no bake brownies, or roll this batter into brownie balls and roll those into crushed pistachios.
    • Mix-ins. You can mix into the batter things such as mini chocolate chips, other crushed nuts, even marshmallows.

    Storage

    • Room temperature. This treat can last a day at room temperature before it will dry out.
    • Refrigerated. Store the sliced coins in an air tighter container in the refrigerator for 4 days.
    • Frozen. After that, freeze for up to 3 months.

    Are pistachos good for baking?

    Yes but they are better used in no bake recipes like this one because when pistacho nuts are heated, they lose their delicate flavor.

    Can I bake this pistacho brownie batter?

    No, it doesn't have any ingredients to help it bake.

    Can you make these pistachio brownies nut free?

    Yes but they won't be pistachio brownies, just seed no bake brownies. To do this, use a seed butter and roll the log in crushed seeds.
