    These pumpkin brownie balls are no bake, no dates, wholesome and made with only 4 ingredients. Instead of dates, I used pumpkin puree, making this healthy chocolate fall treat high in nutrition. Coated with snappy chocolate shell, they are easy to make ahead and keep refrigerated.

    These no bake pumpkin brownie balls are mixed easily in a single bowl, rolled into a ball, and ready after only 15 minutes in the refrigerator.

    These rich no bake pumpkin bites are dairy free, gluten free, vegan and even refined sugar free. They use pumpkin puree instead of dates for structure and extra sweet flavor. Making desserts with vegetables creates treats that are naturally sweet, high in fiber and rich in amazing nutrients.

    Ingredients for Pumpkin Brownie Balls

    • Pumpkin puree. Use canned pumpkin puree, or boil or bake fresh sweet potatoes and use the pulp.
    • Maple Syrup. A refined-sugar-free sweetener.
    • Cocoa. This is unsweetened cocoa. Or use cacao powder for more nutrition.
    • Oat flour. Just dry blend rolled oats to make oat flour.
    • Optional. You might need milk to soften texture, chocolate chips to melt for topping and salt and vanilla for flavor.

    Step 1: Measure the Pumpkin puree:
    Measure out ½ cup of canned pumpkin puree. Not pumpkin pie filling.

    Step 2: Mix the Dough:
    Add ingredients to a bowl and stir into a smooth, scoopable dough. If it’s too dry, add a teaspoon of milk at a time; if too wet, add more almond flour.

    Step 3: Divide the batter into balls. Freeze until hard enough to dip, maybe 15 minutes. Melt the chocolate chips in the microwave for 1 minute. Cool for 2 minutes.

    Step 4: Dip the balls into the cooled, melted chocolate. Refrigerate the balls until set about 5 minutes. Slice and enjoy!

    Can I make these with canned sweet potato instead of pumpkin puree?

    Yes! Sweet potato puree or even butternut squash works well.

    Can I bake this pumpkin brownie balls batter?

    No this brownie balls do not have baking soda to help it rise. Try my vegan brookies, chocolate date brownies or my oreo brownies instead.

    Do I need a food processor?

    No but you can use a blender or food processor to make the texture smooth.

    • ½ cup pumpkin puree canned, not pumpkin pie filling
    • ¼ cup unsweetened cocoa powder
    • ¼ cup maple syrup
    • ⅔ cup oat flour
    • 1 teaspoon pumpkin pie spice

    • 1 cup chocolate chips

    Instructions
     

    Prep

    • Measure out pumpkin puree from a can.

    Make brownie balls

    • Add all ingredients to a bowl. Stir into a sticky texture. Add milk or flour to adjust texture.
      ½ cup pumpkin puree, ¼ cup unsweetened cocoa powder, ¼ cup maple syrup, ⅔ cup oat flour, 1 teaspoon pumpkin pie spice
    • Use a 2 tablespoon scoop to scoop out 10 balls and line them on a parchment lined pan.
    • Chill the balls in the freezer until they are hard enough to dip, maybe 30 minutes.

    Make chocolate topping

    • Add the chocolate chips to a heat-safe measuring cup, microwave for 1 minute. Stir until thick and creamy.

    • Dip the balls into the melted chocolate, lowering with two forks. Sprinkle with your choice.
    • Refrigerate for 5 minutes and serve.

    Notes

    Keep these brownie balls refrigerated for 4 days or freeze for 3 months.
    For a richer flavor, add 2 tablespoon almond or peanut butter.
