    Mango Smoothie with Cold Foam

    A creamy mango smoothie with cold foam made from milk or aquafaba foam. A cold foam top is a refreshing way to enjoy creamy sweet mango and pineapple smoothie.

    This mango smoothie with cold foam is summer in a jar thanks to mango, pineapple, lemon juice and a fluffy top made with aquafaba or ordinary cold foam.

    Foam is not just a great top for coffee, it lightens a smoothie too! You can use cold foam - here is my Starbuck's copycat cold foam recipe, or froth regular milk with hand frother or try a new kind of foam: whipped aquafaba. Aquafaba is the liquid found in a can of chickpeas - it's notable because when frothed it creates the texture of meringue, like on a meringue pie. Aquafaba is low in calorie and doesn't contribute nutrition, it's just a fun texture.

    Ingredients

    • Mango - fresh or frozen. However at least one ingredient must be frozen, mango or pineapple or milk. One fresh medium-sized mango yields one cup chopped fruit.
    • Pineapple - the perfect tropical and yet sweet partner for mango.
    • Lemon juice - to brighten the flavor.
    • Milk - freeze your favorite type in an ice cube tray night before. Never add water to a smoothie.
    • Foam Aquafaba or Milk - Whip the liquid from a can of unsalted chickpeas or make cold foam from milk or creamer.

    To make cold foam, froth cold high fat milk with a hand frother.

    To make aquafaba foam, capture the liquid from a chilled unsalted chickpea can and whip with a hand frother or blender - it will take longer to produce foam with the aquafaba than with the milk.

    • Step 1: Prep ingredients. Freeze milk and fruit overnight. Make cold foam with milk , or whip the fluid from a can of unsalted chickpeas. Either way, whip in a teaspoon or two of pineapple juice or orange juice.
    • Step 2: Make Smoothie. Add all ingredients except the foam into the blender and process until smooth. Pour the smoothie into a glass, spoon on the frothed top, and drink immediately.

    Storage

    Store smoothie covered in refrigerator for no longer than 24 hours, or freeze in an ice cube tray to blend again when convenient.

    Variations

    • Swap the pineapple for any other frozen fruit of a lighter color, such as frozen pears (not peeled), even a frozen banana, although paired with mango might produce a too-sweet smoothie.
    • Swap the milk in the smoothie for a dairy-free but unsweetened yogurt, or chilled coconut water.
    • Add protein and omegas in the form of a handful of chia seeds.

    Prep

    • Either way, flavor it by whipping in a teaspoon or two of pineapple juice or orange juice.

    Make smoothie

    • Add all ingredients to the blender except for the frothed liquid and process until smooth.
      2 cups mango, frozen, 1 cup pineapple, frozen, ½ cup milk, 2 teaspoon lemon juice
    • Pour the smoothie into a glass, spoon on the frothed top, and drink immediately.
      ¼ cup cold foam

    Storage

    • Store smoothie without the foam in a covered jar for no longer than 24 hours. Or freeze in an ice cube tray to blend again when convenient.

    Notes
