A foamy, creamy mango smoothie with a light texture, topped with fruit and made with few ingredients, all rich with nutrition.
A mango smoothie that is summer in a jar. The only way to make a mango smoothie better is to add a fluffy liquid. This can be in the form of milk frothed with hand frother, or try adding whipped and foamy aquafaba. Not only is aquafaba healthy - liquid from a chickpea can - it is also low calorie and puts an airy texture into a smoothie.
Ingredients
Mango - fresh or frozen. However at least one ingredient must be frozen, mango or pineapple or milk. One fresh medium-sized mango yields one cup chopped fruit.
Pineapple - the perfect tropical and yet sweet partner for mango.
Lemon juice - to brighten the flavor.
Milk - freeze in an ice cube tray night before. Never add water to a smoothie.
Aquafaba or Frothed Milk - Milk works well but so does aquafaba, the liquid from an unsalted can of chickpeas, frothed first, before adding other ingredients.

Steps to Make
Step 1: Prep ingredients. Freeze fruit overnight. Use a hand frother to froth either the milk or the aquafaba - room temperature liquid from an unsalted chickpea can - into a foam. About 1 minute.
Step 2: Make Smoothie. Add all ingredients excepted the frothed liquid into the blender and process until smooth. Pour it into a glass, pour in the frothed liquid and drink immediately.
Storage
Store smoothie in a mason jar with lid overnight in refrigerator or freeze in an ice cube tray to blend again when convenient.
Variations
Swap the pineapple for any other frozen fruit of a lighter color, such as frozen pears (not peeled), even a frozen banana, although paired with mango might produce a too-sweet smoothie.
Swap the milk for a dairy-free but unsweetened yogurt, or chilled coconut water.
Add protein and omegas in the form of a handful of chia seeds.
