These No Bake Brownie Bites filled with a 2-ingredient chocolate fudge ganache are rich, soft, indulgent and yet high in protein and only 4 ingredients. They are dairy free, gluten free and refined sugar-free.
These no bake brownie bites are mixed easily in a single bowl, pressed into a mold or cupcake pan, and ready after only 15 minutes in the refrigerator.
This protein rich snack is dairy free, gluten free, vegan and even refined sugar free. And there is no flour involved so no need to heat treat raw flour! In hot summer months, I love these healthy no bake treats - anything to not have to use my oven.

Ingredients
Dates. I use medjool dates found in containers in the produce area. Soak them about 5 minutes in just-boiled water, pit and add to the blender.
Peanut butter. Actually any nut butter works, as does sunflower seed butter or even tahini (sesame seed butter).
Cocoa. This is unsweetened cocoa. I also use cacao powder when I have it as it has more nutrients than, say, Hershey's regular cocoa powder.
Almond flour. Or oat flour. This provides structure to your no bake brownie bites.
Chocolate chips. Use your favorite or even a semi sweet chocolate bar chopped up. You'll be melting this for the filling.
Milk. Use your favorite! I use almond milk. This is to moisten the no bake brownie bite batter, and to add to melted chocolate chips for the filling.

Steps to Make No Bake Brownie Bites

Prep: Boil a pot of water, then turn off heat. Add the dates and soak for 5 minutes, then drain and pit the dates.
Step 1: To a food processor, add the dates, cocoa powder, peanut butter, vanilla and salt. Process then add the flour and milk. Add more or less milk to get the texture you want - I added 6 tbsp. See tips below to use blender.
Step 2: Divide the batter into eight segments. Roll into balls and insert each into a cupcake pan.
Step 3: Press each ball with a tablespoon to create a well.
Step 4: Add the fudge center. Melt the chocolate chips, add milk and spoon the mixture into each well.
Step 5: Freeze them at least 1 hour or until you can remove them from the mold. Enjoy right away!
How to Use a Blender: If you don't have a food processor, it's best to blend just the dates and milk into a paste, then add that date puree and other ingredients to a bowl and stir with a spoon - that way you want strain your blender's motor with the heavy batter.
Storage
Keep these brownie bites refrigerated for 4 days or freeze for 3 months.
FAQS
These no bake brownies are flourless brownies and do not contain any flour. They rely on dates and nut butter for their fudgy texture.

Make brownie bites
- To the food processor, add all ingredients.6 dates, ¼ cup (60g) peanut butter, ½ cup (50g) unsweetened cocoa powder, 1 ½ cup (139g) almond flour, ¼ teaspoon salt, 6 tablespoon milk
- Process and divide the batter into six segments. Roll into balls and insert each into a cupcake pan.
- Press each ball with a small measuring cup to create a well.
Make chocolate ganache fudge filling
- Add the chocolate chips to a heat-safe measuring cup, microwave for 1 minute, and then add 2 tablespoon of milk. Stir until thick and creamy.
- Pour 1 teaspoon into each brownie bite well.
- Refrigerate for 15 minutes and serve.
