    Why Make Brownie Stuffed Cookie Dough Cups

    Ingredients

    • Oat flour. This light flour can be made by dry-blending rolled oats. Or use almond flour for a heavier cookie dough base.
    • Cocoa. Unsweetened cocoa turns the base into brownie batter.
    • Maple syrup. This sweetener is refined sugar free. Date paste can also be used.
    • Peanut butter. Use a runny healthy kind with only peanuts as ingredients, no added sugar. Or use cashew or almond butter to make the cups taste more neutral and less like peanut butter.
    • Milk. Use milk to add a creaminess to your cookie dough and brownie batter. Any milk works.
    • Chocolate chips. You'll melt these to make a snappy topping.

    Steps to Make Brownie Stuffed Cookie Dough Cups

    Prep: Melt chocolate chips in the microwave for one minute and set aside.

    Step 1: Mix cookie dough batter by mixing oat flour, maple syrup, peanut butter, milk and vanilla.

    Step 2: Divide the batter into two bowls with ⅔ in one bowl, and ⅓ in the other bowl. Add the chocolate chips to the larger portion, the cookie dough portion, and add the cocoa and milk to the smaller portion.

    Step 3: Mix the smaller portion into a brownie batter.

    Step 4: Fold the chips into the cookie dough portion.

    Step 5: Press 1 tablespoon of cookie dough batter into a mini muffin mold or pan, and press an indentation for the brownie stuffing to go.

    Step 6: Roll 1 teaspoon of brownie batter into small balls, press flat into the cookie dough cup indentations.

    Step 7: Dollop the melted chocolate on top of each cup. Refrigerate for 10 minutes until the chocolate is set.

    Storage

    Refrigerated. In a sealed container, these brownie stuffed cookie dough cups last 2 weeks.
    Frozen. In a sealed container in the freezer, these brownies with cookie dough cups can last 6 months.

    Recipe Tips

    Use a healthier, runny nut butter. Peanut butter will give your cups a nutty flavor, cashew butter and almond butter will be a more neutral flavor.

    Sweeteners. I used maple syrup to keep it refined sugar free but honey works too if you don't need to make vegan bites.

    Yes, you can replace half the maple syrup with more milk.

    Ingredients
      

    • 2 cups oat flour
    • ⅓ cup maple syrup
    • 1 teaspoon vanilla
    • ⅓ cup peanut butter
    • ½ cup milk
    • 2 tablespoon cocoa
    • ½ cup chocolate chips

    • 1 cup chocolate chips
    • 2 tablespoon coconut oil

    Instructions
     

    Prep

    • Melt the topping chocolate chips in the microwave for one minute.

    Make cookie dough batter

    • Mix cookie dough batter by mixing oat flour, maple syrup, peanut butter, ¼ cup of the milk (half of it) and vanilla.
      2 cups oat flour, ⅓ cup maple syrup, ⅓ cup peanut butter, ½ cup milk, 1 teaspoon vanilla
    • Divide the batter into two bowls, and add the cocoa and the rest of the milk (¼ cup milk) to one batch of batter. Mix into a brownie batter.
      2 tablespoon cocoa
    • Add chocolate chips to the cookie dough bowl and fold in.
      ½ cup chocolate chips
    • Press the cookie dough cups into a mini muffin pan or mold, and indent with a tablespoon.
    • Roll brownie batter into balls and insert into the indentations of the cookie dough cups and level off with a spoon.
    • Dollop the melted chocolate on top of each cup. Refrigerate for 10 minutes until the chocolate is set.
