These healthy protein fudge bites are full of nutrition and made from wholesome ingredients that you probably already have in your kitchen. They take about an hour to freeze, and I used this ice cube tray, but you can use any one you own type or a mold or even paper-lined mini muffin pans.

- Chia seeds. Black or white.
- Yogurt. I used high fat coconut yogurt but you can use any yogurt, including greek yogurt if you don't need the bites to be dairy free and vegan.
- Maple syrup. Or use any liquid sweetener including honey if you don't need the bites to be vegan.
- Chocolate chips. Melt these for the snappy chocolate coating.

Prep: Melt chocolate chips and coconut oil in the microwave for one minute. Dollop a teaspoon into each ice cube tray square.

Step 1: Stir the chia seeds into the yogurt and set aside for 5 minutes to plump the chia seeds.

Step 2: Stir all ingredients together in a bowl.

Step 3: Spoon the chia seed mixture on to the layered chocolate in the ice cube tray.

Step 4: Spoon on the top another layer of melted chocolate.

Step 5: Chill about 15-30 minutes, remove and enjoy.

Frozen. In a sealed container in the freezer, your chia seed protein bites will last 6 months.

- Don't freeze these bites overnight or the chia pudding will become too hard. They taste best after being frozen 15-30 minutes.

Instructions
Prepare the chocolate top & bottom

- Spoon half into the ice cube tray wells. Set aside or refrigerate while you make the filling.
Make chia pudding filling
- Stir the chia seeds into the yogurt and set aside for 5 minutes to plump the chia seeds.
- Stir all ingredients together in a bowl.½ cup yogurt, 2 tablespoon cocoa, 2 tablespoon maple syrup, 1 teaspoon vanilla, pinch salt, 2 tablespoon chia seeds
- Spoon the chia seed mixture on to the layered chocolate in the ice cube tray.
- Spoon on the top layer of melted chocolate.
- Freeze filled trays for 30 minutes or however long it takes for your freezer to freeze them enough so you can remove them from the ice cube trays.
