    These easy chocolate chip peanut butter bars made with almond flour and only 5 ingredients are no bake, high in protein and are ready in under 30 minutes.

    These chocolate chip peanut butter bars are a great replacement for your store-bought protein bars. These homemade protein bars have no refined sugar, no preservatives and no additives. And they are rich in protein, fiber, macro nutrients that you need to power you through the day. Each bar has 11 grams of protein and is the perfect morning or afternoon energy bar.

    Similar to my healthy protein peanut butter bars, and my no bake peanut butter brownies, and my edible peanut butter cookie dough, these easy peanut butter bars are nutty, filling and energizing.

    Why You'll Love These

    These chocolate chip peanut butter bars taste like reeses cups, are no bake, and are made in 5 minutes with minimal chilling time needed.

    They are also naturally vegan, gluten-free and dairy-free with refined-sugar-free sweetened with pure maple syrup, and no oil.

    Ingredients

    Peanut Butter: I use a runny version that has just nuts as ingredients.

    Almond flour: Almond flour adds a butter cookie flavor and a ton of protein to the bars.

    Dates or Maple syrup: I more often use date paste which is dates blended with a bit of water, but if you don't have dates, you can use maple syrup.

    Cinnamon. Adds spice and balances blood sugar.

    Chocolate chips : I use mini semi sweet and fold them in the bar batter, as well as melt some for the topping and stir with hot milk.

    Step by Step Instructions

    For more detail, visit the complete recipe at the bottom of this post, but here are general steps.

    Preparations: Measure out ingredients. Line an 8-inch square pan with parchment paper. If you are using date paste, boil 6 dates for 2 minutes, pit and blend into a paste with about ⅓ cup of water.

    Step 1. Make date paste if you are using it instead of maple syrup. Then add all ingredients to a food processor. It is possible to mix this by hand in a bowl but will take some strength.

    Step 2. Process the mixture and add some water or milk if needed to achieve a pressable texture.

    Step 3. Fold in the chocolate chips. Microwave the chocolate chips and then microwave milk - stir up the melted chocolate top.

    Step 4. Press the mixture into the pan and flatten. Then pour on the melted chocolate top. Chill 15 minutes or more, slice, store refrigerated. Enjoy!

    Recipe Tips

    1. Do not pack the flour. Instead loosen it in the bag and spoon into measuring cups, then scrap off top with a knife for the most accurate measurements.

    Storage

    Store these chocolate chip peanut butter bars in a sealed container in a refrigerator for up to a week. Store in the freezer for up to three months. Separate with parchment paper or plastic wrap to keep them from sticking together.

    Is peanut butter a healthy protein choice?

    Peanut butter is full of good fat, as well as a strong source of protein. One tablespoon of peanut butter provides 4 grams of protein and 2 grams of fiber.

    Does protein bars really help?

    These protein bars are full of macronutrients, including calcium, B vitamins, iron, potassium, and fiber. The protein in particular is important for muscle repair and growth, organ support and bone density.

    • ½ cup peanut butter
    • 3 cup almond flour
    • ¼ cup maple syrup or ⅔ cup date paste
    • 1 teaspoon vanilla extract
    • ½ teaspoon salt

    Chocolate top

    • 1 cup chocolate chips
    • ⅓ cup almond milk

    Instructions
     

    Prep

    • Line an 8-inch square pan with parchment paper

    Make bar crust

    • In a bowl or food processer or blender, mix all ingredients. The batter should be crumbly like cookie dough but still holds it form when you squeeze it. You might have to add some milk or water.
      ½ cup peanut butter, 3 cup almond flour, ¼ cup maple syrup, 1 teaspoon vanilla extract, ½ teaspoon salt
    • Press the batter into the lined pan. Flatten the surface with a spoon.

    Make chocolate top

    • Add the chocolate chips to a microwave-safe glass measuring cup. Microwave the chips for 1 minute. Stir them until most chips are melted.

    • Microwave the milk for 30 seconds and then pour it into the melted chips and stir until smooth.
      ⅓ cup almond milk
    • Pour the chocolate over the crust, and smooth with a spoon.
    • Freeze uncovered for 25 minutes or longer then slice. If you want perfectly square slices, freeze more than 5 minutes.
    • Store in the refrigerator for a week or freeze for three months.

    Instead of maple syrup, you can use ⅔ cup date paste. 
    Peanut butter can be replaced with any nut butter, tahini or even sunflower seed butter to keep it nut free.
