Learning how to melt chocolate chips is easy if you know the trick! I use melted chocolate chips in so many of my minimal ingredient healthy recipes, especially my no bake recipes.
I prefer the microwave method but my stove method is nearly as easy. Both require use of a pyrex or heat-proof measuring cup as my preferred tool. I typically melt 1 cup of chips in a 2 cup measuring cup to allow for stirring.

You'll have more control melting your own chocolate chips for your recipes or as glazes and toppings because you can choose the chocolate chips you'll use rather than rely on a store-bought melted chocolate that will contain extra additives and unwanted ingredients such as corn syrup.

Ingredients

Chocolate chips. Since my recipes are all gluten free and dairy free, I use allergy-free Enjoylife brand. But this method works for all chocolate chips.

Two Ways to Melt Chocolate Chips

Using a Microwave

Step 1: Measure 1 cup of chocolate chips into a 2-cup heat safe container - I like to use this 2-cup pyrex measuring cup.

Step 2: Microwave for 1 minute.
Step 3: Stir the melted chips until smooth. If some chips remain unmelted, microwave again in 10 second increments. Use your melted chocolate in recipes!
Tip: Melted chocolate chips produce half the amount of melted chocolate. For instance, 1 cup of chocolate chips melts to ½ cup melted chocolate.
Using a Pot of Boiling Water

Step 1: Measure 1 cup of chocolate chips into a 2-cup heat safe container - I like to use this 2-cup pyrex measuring cup, the same one I use when microwaving.

Step 2: Fill a pot of water about 2 inches deep. Measure 1 cup of chocolate chips into the measuring cup, and set it in the center of the pot. Do not let any water touch the chips!
Step 3: Turn on the heat and boil the water, stirring the chocolate chips - without letting any water touch the chocolate - until the chips have melted. This takes about 1-2 minutes, depending on how hot your stove is.
Pros: Only one container and a spoon to clean, not counting your pot of water.
Con: It's not as quick as the microwave and it is hard to keep water out of the chocolate.
Storage
You can store melted chocolate chips in a sealed container in the refrigerator for a few days or a month in the freezer, but you will probably have to melt it again so store it in a heat-safe container.
How to Use Melted Chocolate Chips
Use melted chocolate chips in the following ways:
- As a coating for bliss balls, protein balls or truffles
- As a topping for brownies & bar recipes and barks
- As a filling or ingredient for no bake desserts
- As an ice cream glaze or a dip for cookies.

Recipe Tips
If you use the pot of boiling water option, and happen to splash water in your chocolate, the chocolate will turn grainy and can be ruined. If the amount of water splashed in was only a drop or two, dig it out to save your chocolate
If you use the microwave option, be sure to not over-microwave or the chocolate can burn in the very center. This doesn't happen if you stick to 1 minute and then 30 second increments unless your microwave is unusually powerful.
FAQS
I would use the stove for melting white chocolate chips or broken chocolate bars. That is because white chocolate has more sugar and is more prone to burning.
Add coconut oil? Add 2 tablespoon of solid coconut oil to 1 cup of chocolate chips before setting it in the microwave to melt. Proceed as normal.
