    How to make strawberry puree with one ingredient, no sugar, no additives and no cooking required. Use this healthy strawberry sauce in drinks, desserts, and as a breakfast side. Easily converts to a strawberry syrup.

    How to make strawberry puree or strawberry syrup - an easy 1-ingredient recipe using only fresh or frozen strawberries. Make it in bulk when strawberries are in season to avoid the need for sugar additions.

    Strawberry puree, also known as strawberry sauce or even strawberry syrup (if you strain), can be used to create drinks such as my iced strawberry latte, or as a layer in no bake desserts, is fantastic as a layer in cakes, pies or cupcakes, and perfect as a strawberry sauce on yogurt and ice cream, the perfect strawberry syrup for pancakes, baked oats and waffles.

    How To Use Strawberry Puree?

    • For Drinks. Add a few tablespoons to milkshakes, smoothies, lattes and iced coffees.
    • For Desserts. Add to cake batter, cookie dough, any no bake recipe, cheesecakes and ice creams.
    • For Breakfast Recipes. Add a few tablespoons to oatmeal, overnight oats, breakfast bowls, and more breakfast recipes.

    Make strawberry milk. Add 3 tablespoon of puree to 1 cup of milk, shake or blend. Optional, add a teaspoon of maple syrup to taste. Enjoy chilled!

    • Strawberries. Organic and fresh are best, preferably in peak season when strawberries are at their sweetest. Strawberry season in the USA is roughly between February and July, with peak season between May and June.

    Pro-tip: Rinse your strawberries in white vinegar and water (1 part vinegar to 4 parts water) for 5 minutes to remove bacteria.

    Step 1: Wash your fresh strawberries. Either rinse in water or do the vinegar wash (1 part white vinegar and 4 parts water for 5 minutes).

    Step 2: Cut the berries and add them to a blender.

    Step 3: Process for 30 seconds to 1 minute for a chunky puree. Process longer for a creamier texture.

    Step 4: Store in a clean jar with a tight cover.

    Storage of Strawberry Puree

    • Refrigerate. Store strawberry puree in a sealed container for 1 week.
    • Frozen. Add the puree to ice cube trays, or store in ziplock bags. They will last about 5 -6 months before getting frosty depending on your container.

    Make Sweetened Strawberry Syrup

    To make a sweet strawberry syrup, follow these steps:

    1. To your blender, add 2 cups of strawberries, 2 tablespoon of coconut sugar (or maple syrup), and 2 tablespoon of water.
    2. Process and taste to adjust for sweetness. The level of sugar you need will depend on the sweetness of your strawberries.
    3. Store in a clean bottle or jar.
    4. Refrigerate strawberry syrup up to two days; freeze in ice cube trays for three months.

    Can I thicken my puree into a strawberry jam?

    Yes, stir 2 tablespoon of chia seeds into 1 cup of strawberry puree and 2 tablespoon of water. Set aside until the chia seeds plump. Stir again. Keep your strawberry chia seed jam refrigerated for 3 days. Freeze after that in ice cube trays for up to 3 months.

    Can I remove the seeds of my strawberry puree or syrup?

    Yes, you can try pressing it through cheesecloth or a fine strainer. You might have to add more water.

    • Clean strawberries with water or sit them in a vinegar bath for 5 minutes (1 part vinegar + 4 parts water)
    • Chop strawberries, and place them in a blender.
      2 cups strawberries
    • Blend for 30 seconds to 1 minute. The longer you process, the smoother your puree will be.
    • Transfer your puree to a container with a cover.

    Notes

    To make sweetened strawberry syrup, add 2 cups of washed, chopped strawberries, 2 tablespoon of coconut sugar and 2 tablespoon of water to a blender. Process for 1-2 minutes. Store refrigerated or frozen.
