    This creamy vanilla date smoothie, or salted caramel smoothie, is loaded with healthy fats and lots of fiber thanks to frozen cauliflower, dates and omega-rich chia seeds. This smoothie reduces inflammation, nurtures your gut and supports skin health thanks to nutritious dates and omega-rich chia seeds.

    Ingredients for Vanilla Date Smoothie

    • Dates. Use medjool dates, soaked for 5 minutes and pitted. These add the healthy caramel base.
    • Cauliflower. I use frozen and riced cauliflower but any cauliflower works - just be sure it is frozen first.
    • Yogurt. I used dairy free yogurt, but Greek yogurt works as well if you don't need dairy free.
    • Rolled oats. Adds fiber and nutrition.
    • Chia seeds. These add an incredible amount of protein and fiber, as well as thicken the texture.
    • Vanilla. The star flavor of the show - use a quality vanilla extract, or even vanilla extra plus a scrapped vanilla pod or vanilla paste.
    • Salt. Very important to contribute to the salted caramel flavor profile.
    • Pantry ingredients: Spices, Milk.

    Steps to Make Date Smoothie

    For more detail, visit the complete and printable recipe at the bottom of this post, but here are general steps.

    Prep: Boil a pot of water, then turn off heat. Add the dates and soak for 5 minutes, then drain and pit the dates.

    Step 1: Add all ingredients to a blender.

    Step 2: Blend slowly at first, then faster for about one minute. Add more milk if needed to help blending.

    Step 3: Top your smoothie with foamed milk or whipped cream and spices.

    Recipe Tips

    • You can replace the frozen cauliflower with frozen banana.
    • To boost nutrition without increasing calories, add 2 tablespoon flax seeds.

    Flavor enhancing tip: Add a quarter teaspoon of nutmeg or replace the cinnamon with pumpkin pie spice mix to enhance the spicy flavor.

    Storage

    Store your vanilla date smoothie in a container in the refrigerator for 24 hours or freeze in an ice cube tray for long term. When you ready to drink it, blend the cubes with a bit of milk.

    Yes, use zucchini or leave it out.

    Is this date smoothie sweet?

    This smoothie is sweetened by the dates. If you need it sweeter, add another date.

    • 3 dates, soaked and pitted
    • ½ cup cauliflower, riced and frozen
    • ½ cup yogurt
    • 2 tablespoon rolled oats
    • 2 tablespoon chia seeds
    • 1 cup milk I used dairy free almond milk, any milk works
    • ½ tablespoon vanilla
    • ⅛ teaspoon salt

    Optional

    • 1 teaspoon cinnamon or pumpkin pie spices
    • 1-3 tablespoon milk if needed to blend

    • Soak the dates in just boiled water for 5 minutes.
      3 dates, soaked and pitted
    • Add all ingredients to a blender.
      ½ cup cauliflower, riced and frozen, ½ cup yogurt, 2 tablespoon rolled oats, 2 tablespoon chia seeds, ½ tablespoon vanilla, ⅛ teaspoon salt, 1 teaspoon cinnamon or pumpkin pie spices, 1-3 tablespoon milk if needed to blend, 3 dates, soaked and pitted
    • Blend for 1 minutes.
    • Pour into a glass, top with foamed milk or whipped cream, dust with spices.
