    Chocolate oatmeal brownie balls are rich in fiber and protein, and easy to mix in one bowl with just 5 ingredients including rolled oats and peanut butter. No bake and ready in 10 minutes. Perfect lunch box treat.

    My chocolate oatmeal brownie balls are the best oat breakfast brownie balls. High in fiber and protein thanks to oats and peanut butter. They are easy to make ahead and perfect for an afternoon protein treat or lunch box snack. Coat in melted chocolate, and sprinkled with granola.

    Ingredients

    • Rolled Oats. Rolled oats add fiber and help keep these oatmeal peanut bars gluten-free and nut-free and give the oat bar structure.
    • Peanut Butter. Any nut butter can be used.
    • Maple syrup. Or make a date paste with Medjool dates.
    • Chocolate. This recipe uses both unsweetened cocoa powder and chocolate chips.
    • Milk. I used almond milk to keep the bars dairy-free, but any milk works.

    Steps to Make Peanut Butter Oat Balls

    Step 1: Measure out ingredients. Mix ingredients in a bowl until crumbly.

    Step 2: Roll into balls and line them up on a parchment paper lined pan.

    Step 3: Melt the chocolate chips in the microwave, and dip each ball.

    Step 4: Sprinkle with rolled oats and granola on wet chocolate shell.

    Step 5: Chill in the refrigerator for 5 minutes.

    Recipe Tips

    • Make sure you use a peanut butter that is natural and made of just nuts and oil.
    • To use maple syrup, use ¼ cup. To use date paste, use ⅓ cup and make it by blending 4-5 Medjool dates in ¼ cup of water.

    Storage

    • Room temperature & refrigerated. These chocolate oatmeal brownie balls are fine at room temperature for 2 days. Refrigerate for up to 4 days.
    • Freeze. To freeze, put them cut into a sealed container and freeze for up to three months.

    • 2 tablespoon maple syrup ⅓ cup date paste
    • ¼ cup milk
    • 1 cup rolled oats
    • 2 tablespoon cocoa

    • In a bowl, stir together oatmeal brownie ball batter.
      ¼ cup peanut butter, 2 tablespoon maple syrup, 1 cup rolled oats, 2 tablespoon cocoa, ¼ cup milk
    • Divide the batter into balls. Use a 2-tablespoon scoop.
    • Melt chocolate chips in the microwave for 1 minute, let cool for 2 minutes.
      ½ cup chocolate chips
    • Dip the balls.
    • Sprinkle oats or sprinkles on wet chocolate shell.
      1 tablespoon coconut oil
    • Refrigerate the balls until set about 5 minutes.
