- Oat flour. This light flour can be made by dry-blending rolled oats. Or use almond flour for a heavier cookie dough base.
- Cocoa. Unsweetened cocoa turns the base into brownie batter.
- Maple syrup. This sweetener is refined sugar free. Date paste can also be used.
- Peanut butter. Use a runny healthy kind with only peanuts as ingredients, no added sugar. Or use cashew or almond butter to make the cups taste more neutral and less like peanut butter.
- Milk. Use milk to add a creaminess to your cookie dough and brownie batter. Any milk works.
- Chocolate chips. You'll melt these to make a snappy topping.

Steps to Make Brownie Stuffed Cookie Dough Cups

Prep: Melt chocolate chips in the microwave for one minute and set aside.
Step 1: Mix cookie dough batter by mixing oat flour, maple syrup, peanut butter, milk and vanilla.
Step 2: Divide the batter into two bowls with ⅔ in one bowl, and ⅓ in the other bowl. Add the chocolate chips to the larger portion, the cookie dough portion, and add the cocoa and milk to the smaller portion.
Step 3: Mix the smaller portion into a brownie batter.
Step 4: Fold the chips into the cookie dough portion.
Step 5: Press 1 tablespoon of cookie dough batter into a mini muffin mold or pan, and press an indentation for the brownie stuffing to go.
