    A single serving brownie with almond flour made in one minute, fudgy, and without eggs, gluten free, dairy free. A healthy protein mug brownie made in a microwave or oven.

    This single serving brownie with almond flour is a high protein mug brownie that can be made in 1 minute in the microwave, or 5 minutes in the oven. All you need is a ½ to 1 cup container - either a ramekin, pan or mug. I used a ramekin similar to this one.

    This is a no egg brownie, and this is the best microwave brownie recipe, probably because the almond flour keeps it moist. You probably have the ingredients in your kitchen so if you want a quick brownie, I have your back!

    Why Brownie in a Mug?

    The reasons to love this one-minute recipe are many, including:

    • Single serve brownie that is ready in 1 minute.
    • One brownie has 10 grams of protein and 6 grams of fiber.
    • Use a microwave or oven.
    • No dairy, no eggs, no gluten in this recipe, and it is vegan.

    Ingredients Needed

    • Almond flour. Almond flour is needed for this recipe - I haven't tested any other and the high protein in the flour helps create the brownie's fudgy texture.
    • Sugar. Use organic cane sugar if possible - it dissolves better than granulated sugar but any white sugar will work.
    • Cocoa powder. Any cocoa works, although dutch processed will be "sweeter" than cacao powder which is healthier.
    • Baking soda. Reacts with lemon juice to raise the cake into a fluffy texture.
    • Lemon juice. Need to add acid to react with milk and baking soda. You can also use white vinegar or apple cider vinegar.
    • Peanut butter. Or any nut butter works. I often use Whole Food's 365 brand of organic almond butter because I love the flavor.
    • Milk. I used my own homemade oat milk but any milk works.
    • Chocolate chips. I use mini chips and only ½ a tablespoon to sprinkle on top but any small chocolate chips or chunks work.

    How to Make Single Serving Brownie

    Step 1: Rub oil on a microwave-safe cup or ramekin. Add ingredients to a small bowl.

    Step 2: Mix with a spoon.

    Step 4: Sprinkle with mini chocolate chips.

    Step 5: If you use a ramekin like mine, microwave for 30 seconds, then remove and return to microwave for another 15 seconds. If you use a mug, microwave 45 seconds and another 30 seconds.

    Recipe Tips

    Microwave cooking times: Your microwave time might vary with the mug or ramekin size you use and with your microwave power. Start with the times I give above and experiment as to how much longer you'll need to microwave the second time to get a fluffy cake texture. If your mug is deep, you might need to microwave a full minute the first time.

    Storage

    Brownie mug cakes should be eaten immediately. You can refrigerate and microwave for 10 seconds to reheat but the texture might be drier.

    Make Ahead Option: You can add dry ingredients to a bag or container, and when you are ready to make a single brownie, just add the almond butter and milk and make your brownie.

    Bake Single Serving Brownie in Oven

    To bake this single serving brownie in the oven: Preheat the oven to 350 F. Use an oven-safe ramekin or small pan. Grease it and bake for 6-8 minutes. Test the brownie center with a toothpick.

    FAQS

    Is brownie batter safe to eat without eggs?

    This batter is safe to eat because the flour is almond flour which is safe to eat raw. However, if you have a brownie batter that uses all purpose flour, you must first heat treat the flour before eating it raw.

    Why is my brownie mug cake chewy?

    Brownie mug cakes can have chewy spots when over-microwaved - that is why I recommend you start with only 30 seconds and continue microwaving in 15-second increments until the top looks cooked.
